Long and busy work weeks call for quick, easy (and delicious) dinner recipes.
As much as I love to cook, after a long day at the office the last thing I want to do is spend hours in the kitchen. This recipe takes about 15-20 minutes from start to finish and involves probably one of my favourite ingredients ever…pasta!
For two people, you will need:
- 115g Linguine
- 1 Tbsp Olive Oil
- 100g Butter
- 2 Cloves Garlic, minced
- 1 tsp Chilli Flakes
- 225g Prawns
- 1 Tsp Dried Oregano
- 2 Cups Baby Spinach
- 1/4 Cup Parmesan
- 1 Tbsp Parsley, chopped
- Salt & Pepper to taste
Start by boiling a large pot of water and adding the linguine. Cook until completely soft (you can add a teaspoon of olive oil to ensure the pasta doesn’t stick together). Drain and set the pasta aside.
In a large pan, heat the olive live oil and two tablespoons of the butter. Add garlic and cook until the garlic starts to go brown and gives off a lovely fragrance. Throw in the prawns, salt and pepper to taste and the chilli flakes. Add the oregano and spinach and cook until wilted.
Add the linguine, the remaining butter, parmesan and parsley. You can also add a few tablespoons of milk if you want the pasta to be slightly creamy.
Finally, squeeze the lemon and garnish with more parsley before serving.
You can replace the prawn with chicken and even throw in some mushrooms into the mix. And there you have it, a really quick and delicious dish to make any day of the week!
