Summertime in London means endless barbecues (or as many as the British weather allows) with jugs of Pimms and sweet and savoury nibbles to enjoy with your loved ones.
These oat and cinnamon cookies are the perfect way to enjoy gatherings with family and friends (add some shredded ginger and they become festive Christmas cookies as well!).
To make roughly 12, you will need:
- 1 cup all purpose flour (or wholemeal flour)
- 3/4 tsp baking soda (bicarbonate of soda)
- 1 tbsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 egg, beaten
- 1 tsp agave nectar (optional)
- 1 tsp vanilla extract
- 1 cup rolled oats
Preheat your oven to 180ºC. Place the flour, baking soda and cinnamon in a mixing bowl, mix together and set aside. Place the butter and sugar in another bowl and whisk together till light and fluffy. Add the vanilla extract and agave nectar to the wet ingredients and whisk together once again. Add the dry and wet ingredients together until completely combined. Stir in the oat until well combined as well. Place 2-inch balls on a baking tray with enough space in between as these cookies do expand quite a bit. Bake for 10-15 mins or until you see the top going slightly brown. Remove from the oven and cool for another 10 mins. Enjoy with a cool glass of milk or a cup of hot tea for the perfect summer afternoon.
There are also several variations you could try with this recipe, such as adding chocolate chips, blueberries, peanut butter or even shredded ginger for an added kick!
