Yogurt Baked Chicken

Another quick and easy recipe for those long days when you just can’t bear to spend hours in the kitchen but want to avoid reaching for a frozen pizza or a delivery from your local takeaway.



1 Pack of Chicken Thighs

1 Sweet Potato, Cubed

1 Butternut Squash, Cubed

3 Garlic Cloves, Diced

Panko Bread Crumbs

1/2 Cup Yogurt




eat_wear_wander_chickenPlace chicken thighs in a bowl and season with salt and pepper


In another bowl, mix half a cup of yogurt with the diced garlic and thyme leaves


Coat each piece of chicken with the yogurt, garlic & thyme mixture


Place the cubed sweet potato and butternut squash  in an ovenproof dish and layer the chicken pieces on top. Feel free to use other vegetables as your base!


Sprinkle the Panko bread crumbs evenly all over the chicken pieces and place the dish in the oven at 200°C for 45 minutes or until brown



eat_wear_wander_pastaI served mine with wholemeal pasta and some home made pasta sauce but a nice big salad is also a great alternative!
