After a long day at work and an hour or so at the gym, the last thing I want to do when I get home is spend hours in the kitchen preparing a meal! This super easy Garlic & Pesto Chicken recipe is perfect for busy bees, giving you enough time to carry on with other tasks as it cooks away in its garlic-y goodness.
Ingredients (Serves Two)
1 Pack of Chicken Thighs and Drumsticks
A Handful of Mushrooms
3-5 Garlic Cloves
2 Tbsp Green Pesto
Place the chicken thighs and drumsticks on top of the vegetables and sprinkle with salt and pepper. Layer on the green pesto and olive oil mixture, making sure that all of the chicken is covered. Drizzle some more olive oil all around the dish.
Place the dish in a pre-heated oven at 200ºC and cook for 45-50 minutes or until the chicken has turned brown and looks slightly crispy. I served mine with side of whole wheat fusilli pasta (my favourite!) but a nice big salad is a great low-carb alternative.
And there you go; a ten minute prep with around an hour of cooking (by itself). Easy peasy!
